Cryogenic quick freezer is widely used in the food cold chain resulting from the better quality of frozen food. Due to the rapid freezing rate, water in food will become total or partial vitrification with cryogenic technology. The freezing process of food in liquid nitrogen (LN2) cryogenic freezer was discussed. Then, the characteristics of different cryogenic freezers were compared, including immersion freezer, box type freezer, tunnel freezer and spiral freezer. Relevant research on cryogenic freezer based on LN2 is beneficial to improve the quality of frozen food in cold chain.
